Prepare the pancake batter and prepare the appams in a paniyaram pan and fill with any jam or fruit preserve or even fresh fruit of your choice for an interesting twist on pancakes.
1 pack of any of our pancake mixes.
Required quantity of milk as specified on the package
Jam or fruit spread or fresh cut up fruit.
Ghee or coconut oil for frying
Prepare the pancake batter as specified on the package directions.
Heat an appam or a paniyaram pan to medium heat.
Keep the heat on low and ladle 1-1.5 teaspoons of batter into each cavity (half of the size of the appam).
Top with jam/spread/fresh fruit, and then add one more teaspoon of batter to each cavity on top of the fruit/fruit spread.
Wait for a minute or two until you are able to flip the appams. Flip them and cook on the other side, and remove from the pan.
Dust powdered sugar on top of the appams and enjoy.
