In a mixer grinder jar, combine all the ingredients except the chia seeds (if using) and grind everything together until there are no more lumps.
Transfer to a jar. This sauce can be used as is if you aren't using chia seeds.
If you want the chia/sabja seeds, blend the sauce with 1/2 cup of water and then transfer to a bowl. Then mix in the chia seeds and leave it overnight in the refrigerator. The chia seeds will absorb the water and plump up and make the sauce thicker.
Since this is an uncooked sauce, you will need to use it up within a day or two.
