Prepare the pancake batter a little more watery than is mentioned on the package to make thin pancakes. Let them cool, spread with the cinnamon spread and roll. Cut into small pices and secure with a toothpick. Makes for a very interesting snack for kids.
1 pack Chocolate Coconut Pancake Mix
2 cups milk
1/2 cup brown sugar
1 tsp cinnamon powder
1.5 Tbsp milk (for the spread)
Prepare the better as per the instructions on the back of the pack. Use 2 cups of milk instead of 1 and 2/3 cups as mentioned on the pack. The batter should be a little thinner for this recipe than for regular pancakes.
Prepare the pancakes and let them cool completely. If the pancakes are hot or warm, they will not be flexible to make rolls.
Mix brown sugar, cinnamon and milk until all the sugar is dissolved.
Spread the brown sugar glaze on top of all the pancakes.
Roll the pancakes and cut them into 1 inch slices. Secure with a toothpick.
