berry sheet cake

Ingredients:
1 pack Vanilla pancake mix.
1.5 cups milk
2 Tbsp butter
1 cup Strawberries chopped into bite size pieces.

Instructions:
  • Preheat the oven to 350 degrees. 
  • Prepare the batter as per the instructions on the pack. 
  • Prepare a 8x8 cake pan - spread a dab of butter all over the pan, and dust with plain flour.
  • Arrange the chopped berries on the pan, covering the entire surface of the pan. 
  • Pour the prepared batter on top of the berries, again covering the entire pan. 
  • Bake the Sheet cake for 15-20 minutes until a knife inserted in the centre comes out clean. 
  • Let it cool completely and invert onto a serving plate.

Coconut cinnamon Rolls

Ingredients:
  • 1 pack Chocolate Coconut pancake mix
  • 2 cups milk
  • 1/2 cup Brown sugar 
  • 1.5 Tbsp Milk

Instructions:
  • Prepare the better as per the instructions on the back of the pack. Use 2 cups of milk instead of 1 and 2/3 cups as mentioned on the pack. The batter should be a little thinner for this recipe than for regular pancakes.
  • Prepare the pancakes and let them cool completely. If the pancakes are hot or warm, they will not be flexible to make rolls. 
  • Mix brown sugar and milk until all the sugar is dissolved. 
  • Spread the brown sugar glaze on top of all the pancakes. 
  • Roll the pancakes and cut them into 1 inch slices. Secure with a toothpick.

CHOCOLATE SAUCE

  • Ingredients:
  • 1/2 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 1/2 cup cold water
  • 1 1/2 teaspoons vanilla

Instructions:
  • In a cold saucepan, whisk together the cocoa and the sugar until all lumps are removed. Add the salt and the water and bring to a boil over medium to medium high heat. 
  • Reduce to a simmer; stirring constantly. Simmer for about 30 seconds and then remove from heat. Let cool and then add vanilla. Pour into a glass jar and refrigerate until needed​.
Note:The chocolate sauce will be very thin when it finishes boiling, but it will thicken quite a bit as it cools. The chocolate sauce may be stored in the refrigerator for up to two weeks. Simply reheat before serving.

PANCAKE YOUGHURT PARFAIT

Ingredients:

1 pack of any flavor pancake mix of your choice. 
1 tub flavored yogurt(any flavor of your choice)
Mixed fruits chopped into bite size pieces
Mixed nuts

​Instructions:
Prepare the pancakes as per the directions on the pack. 
Cut them into bite size pieces.
Layer the chopped pancakes, flavored yogurt, fruits and nuts into a parfait glass or any tall glass. Top off with your favorite fruit conserve.

Apple rings

​Ingredients:
  • 1 pack Vanilla pancake mix
  • 1.5 cups milk
  • 1 tbsp plain atta or maida
  • 2Tbsp butter. (for the batter)
  • More butter for the tawa.
  • 2 Apples

​Instructions:
  • Peel the apple, cut them into rings. Use a knife or a small cookie cutter to remove the core from each slice. 
  • Dust the rings with plain wheat flour.
  • Prepare the pancake mix batter as per the instructions on the pack. 
  • Heat a non-stick or cast iron tawa on medium heat. Apply some butter/ghee to prevent the rings from sticking. 
  • Dip the rings into the batter until fully covered and transfer to the tawa. Wait 2-3 minutes until the ring is browned on the bottom. Flip and let the other side also brown. 
  • Finish of all the slices. 
  • Serve with honey or chocolate syrup or any other fruit syrups.
